  • 1 block (14 oz) firm or extra-firm tofu, drained
  • 1 tablespoon olive oil or vegan butter
  • 1/2 small onion, finely chopped

  • 1 teaspoon turmeric (for color)
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons nutritional yeast (optional, for a cheesy flavor)
  • Fresh spinach, kale, or cherry tomatoes (optional)

Steps:

  1. Prepare the Tofu:
    Pat the tofu dry with a clean towel and crumble it into small pieces using your hands or a fork. Set aside.

  2. Sauté the Vegetables:
    Heat the olive oil in a large skillet over medium heat. Add the chopped onion and bell pepper, cooking until softened, about 3-4 minutes.
