Instructions

1. Make the Biscuits:

  • Preheat the oven to 450°F (230°C).
  • In a large bowl, mix together the flour, baking powder, and salt.
  • Cut in the cold butter with a pastry cutter or two forks until the mixture resembles coarse crumbs.
  • Gradually add the milk, stirring gently until the dough just comes together. Be careful not to overwork it.
  • Turn the dough onto a lightly floured surface and gently pat it into a rectangle about 1-inch thick. Fold the dough over onto itself three times to create layers.
  • Roll it out to about 1-inch thickness and cut into rounds with a biscuit cutter.
  • Place the biscuits on a baking sheet and bake for 10-12 minutes, or until golden brown.

2. Prepare the Gravy:

  • While the biscuits are baking, brown the sausage in a large skillet over medium heat, breaking it up into small crumbles as it cooks.
  • Once the sausage is cooked through, sprinkle the flour over it and stir to coat. Cook for about 1-2 minutes to remove the raw flour taste.
  • Gradually add the milk, stirring constantly, until the gravy thickens to your desired consistency. If it gets too thick, add a little more milk.
  • Season with salt, pepper, and crushed red pepper flakes if you like a bit of heat.

3. Serve:

  • Split the warm biscuits in half and ladle the sausage gravy over the top. Serve immediately, preferably with a side of crispy bacon or fried eggs.
