French Vanilla Almond Granola: A Crunchy Treat for Every Occasion

Ingredients:

  • 3 cups rolled oats
  • 1 cup sliced almonds
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil (or butter, melted)
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt

Optional Add-ins:

  • 1/2 cup dried fruit (raisins, cranberries, or apricots)
  • 1/4 cup mini chocolate chips (add after baking)

Steps:

  1. Preheat and Prep:
Heat your oven to 325°F (160°C). Line a large baking sheet with parchment paper to keep things mess-free.

  2. Mix the Dry Ingredients:
In a large bowl, combine the rolled oats, sliced almonds, cinnamon, and a pinch of salt. Stir well to distribute everything evenly.

  3. Create the Flavor Base:
In a small saucepan, warm the coconut oil (or butter) and honey over low heat until fully melted. Remove from heat and stir in the vanilla and almond extracts. This fragrant blend will coat your granola with rich, buttery goodness.

  4. Combine:
Pour the liquid mixture over the dry ingredients and stir until every oat and almond is lightly coated. The scent of vanilla and almond will already have your kitchen smelling amazing!

  5. Bake to Perfection:
Spread the mixture evenly on your prepared baking sheet. Bake for 20-25 minutes, stirring halfway through to ensure even toasting. Keep an eye on it during the last few minutes—it should be golden and aromatic, not burnt.

  6. Cool and Customize:
Remove the granola from the oven and let it cool completely on the baking sheet. As it cools, it will crisp up beautifully. Stir in dried fruit or chocolate chips if desired.

  7. Store and Enjoy:
Transfer the granola to an airtight container. It will stay fresh for up to 2 weeks. Serve it over yogurt, with milk, or enjoy as a snack straight from the jar!
