Fragrant Egg Curry

Fragrant Egg Curry is a richly spiced dish featuring boiled eggs simmered in a luscious, aromatic tomato and onion gravy. Perfect with rice, naan, or flatbreads, it’s a comforting and flavorful meal.

Ingredients:

  • 6 large eggs, hard-boiled and peeled
  • 2 tablespoons oil (vegetable or coconut)
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 2 medium tomatoes, pureed
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 1 teaspoon paprika or Kashmiri chili powder (for mild heat)
  • 1/2 teaspoon ground cinnamon
  • 1 cup coconut milk or water (optional for a creamier curry)
  • Fresh cilantro for garnish
  • Salt to taste

Steps:

  1. Prepare the Eggs:
    Lightly score or poke small slits in the boiled eggs with a fork to allow the curry flavors to infuse.

  2. Sauté the Base:
